There are times when you can easily change a recipe to work for Keto, but whenever I find one that is already Keto it makes it all the better!
Keto Jalapeño Popper Chicken!
Chop your Jalapeños without the seeds unless you like it really spicy.
Chop your cilantro.
Grate your cheese, I do it in the Vitamix.
Cook your bacon, I like to bake it.
Put some bacon grease in a pan.
Season your chicken, I tried it with chicken thighs, but wasn’t that great, the second time I made it with Breasts and it was SO MUCH BETTER!
Fry/cook on both sides until done and juices run […]
My husband loves a hearty breakfast which is where Keto is awesome! Bacon and eggs really stick with you longer than cereal, a muffin, or pancakes. But cooking every morning can get a little wearing. So I decided to make a Keto version of one of our favorite breakfast casseroles. There are a lot of different Keto breakfast casseroles or “quiches” out there, but a lot of them have spinach or another vegetable in them that Grant finds weird in that dish. So here is one that we really like.
Here is our sausage breakfast casserole.
The original recipe is pretty […]

I added one scoop of whey protein.
Stir really well or blend in a blender.
Then add some PB2, I started out with one teaspoon and stirred […]
I am a sucker for desserts, so I have been working on making a Keto Marbled cheesecake. The first attempt wasn’t that great, but this second one was really good. I got the surprised look and nod of approval from Grant so that has to be good.
They actually look pretty too!
For the crust, I ground up hazelnuts and almonds because I had them on hand, and prefer a more chunky crust, but you can always use almond meal if you prefer that.
All ground up, and I just put the extra in a tupperware container until I use it […]
I like making truffles, especially for gifts at the holidays. They are really tasty, and you don’t have to give a ton for a satisfying gift. I started seeing all of these amazing fall post on pinterest, and it was time to make these. I was in Dime Box, TX at my parent’s place when I took these pictures; it was fun having a bigger kitchen with better lighting. I found this recipe and the instructions on how to make these truffles with molds here. I have one recipe that is the normal dark chocolate truffles with hazelnut liquor, […]
