Whirlwinds!

Grant and I have been so blessed with everything that has been going on lately, but with the blessings have come busyness! Grant started on thursday and has been doing orientation which he is doing for the remainder of this week as well. So, he hasn’t really gotten to do what his job is per say. The orientation is pretty good just not Grant’s favorite activity since he is an introvert. It has been a nice change for both of us for him to be working, Grant thrives with routines, and now he feels he finally has one. I am excited because I know he is happy working. The biggest change for me is that I have to plan ahead a little bit more with my meals. I was always able to call Grant around lunch time and have him take whatever meal we were having out of the freezer so it would be ready when we got home to cook or bake.

Cakesters….Whoopi Pies

For Ashley’s Baby Shower, I also made Whoopi Pies and forgot to add them in the pictures. So below is how I made them and then the recipe that I used. They turned out really good and they remind me of cakesters a little bit. I bought a Whoopi pie pan, and the funny thing is I like the shape of the Whoopi pies better without it. This pan though, happens to be the perfect shape and size for baking eggs for my breakfast sandwiches that I make.

Exciting News!

No, we are not pregnant, and we aren’t wanting a child yet either! My one sister thought that I was calling to tell her that, but Grant and I are excited to reveal that Grant accepted a job here in Austin! He got the offer on my birthday, but he was still interviewing with another company so we wanted to make sure that this was final and all. He starts the 16th of February, and it is a full time, full benefits job! He accepted the position of Support Engineer. I have no idea what life will bring next; looking back, I don’t think we could have ever predicted where we are now. We are so blessed; this job is within a few miles of my work and very close to where we live. We might move closer to our jobs when our lease is up later this year. I am on cloud nine! I feel like we can finally start paying off loans and saving money. I wanted to keep this post short and sweet. Thank you for everyone who has been praying for us we cherish your support!

Simple Lasagna!

Grant and I love lasagna!  It is a go to meal and I think this is what Grant wanted at this last birthday as the meal of choice! I should start adding spinach or mushrooms, but this recipe is just so good as it is we never have looked to improve it! This recipe is baked in the oven, but I want to try a crock pot version eventually, I don’t see how it wouldn’t work.

Chocolate Covered Oreos

For Ashley’s Baby Shower, a while ago, I was asked to make chocolate covered oreos. There is a really easy way, where you can just dip the oreos in chocolate and place them on a sheet to dry. The only thing I don’t like about this method, is that I feel they don’t look perfect enough. Now don’t get me wrong there are times when look doesn’t matter, but for this baby shower we wanted everything as close to perfect as we could get.
