Fajita Marinade

Fajitas is a dish that never grows old – I always love eating it. Here is one of the fajita marinades that we both really like. I think it would be better with beef, but normally because of the price we stick with chicken. Also, if you have a grill this will probably make it sooo much better tasting,but since we don’t have one we make due.

I put the marinade in a ziploc bag and move it all around so that it is as evenly mixed up as possible.

I add the sliced chicken, but you could use beef flank steak as well.

Mix everything well, and then place in the fridge to marinate.

Add your sliced bell peppers. I often buy a ton of bell peppers on sale and then slice or chop them and freeze them in individual bags. These bell peppers are now thawed and ready to use for this dish.

Add the marinated chicken, and dispose of the bag.

I added one red onion,but you could always add more.

Then mix and cook.

 Once the chicken is done and the onions are cooked, they are ready to serve.

Homemade Fajitas!(Marinade recipe found here!)

Ingredients:

Marinade
Original recipe makes 2 cups
1/4 cup lime juice
1/3 cup water
2 tablespoons olive oil
4 cloves garlic, crushed
2 teaspoons soy sauce
1 teaspoon salt
1/2 teaspoon liquid smoke flavoring
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
 Other Ingredients
Tortillas
1-2 chicken breasts sliced or flank steak
red onion
1-2 bell pepper
sour cream
guacamole
salsa
cilantro
lime
tomatoes
shredded cheese

Directions

  1. In a large resealable plastic bag, mix together the lime juice, water, olive oil, garlic, soy sauce, salt, and liquid smoke flavoring. Stir in cayenne and black pepper.
  2. Place desired meat in the marinade, and refrigerate at least 2 hours, or overnight. 
  3. Place the marinated meat in a skillet and with a red onion that is sliced and the bell pepper. Cook until chicken is done and the onions are starting to get soft. Or Grill.
  4. Serve with desired toppings and Enjoy!
