My sister, Tanya, introduced me to this great breakfast casserole recipe that her friend gave her. It is a great dish to make when hosting since it is yummy and easy to throw together. My only annoyance at the recipe, is that it always has to cook longer than the directions say in order for there not to be ANY runny stuff in it. Grant is very picky, so I would sometimes have to bake it over an hour to make sure it was the consistency that he liked. So, I decided to try it in the crock pot one time, and it turned out amazingly wonderful!
Keto
Roasted Broccoli is a dish that Grant and I both really like. Here is a recipe that I found online on a blog, but the recipe has since been taken down so I figured that I would share it here since we like it so much. This recipe can be gluten free, just depends on how you decide to prepare it. Also, this recipe is made with frozen broccoli which I love because that is how we tend to buy it.
Sorry about the silence lately, we have been having issues with our blog host, and poor Grant has spent hours with “live chat” customer support, and anyone else he can get a hold of. Eventually I think we have it figured out,but wish it hadn’t been such a hassle for him. Oh well. Starting in January, I have been trying to do a better job of not wasting food, not going grocery shopping more than 2 times a week, and having an actual meal plan. It is very easy to make a meal plan, but it actually takes you sitting on your butt, writing it out, and shopping for those ingredients. Even though I have been doing a weekly meal plan, we haven’t eating these things each time, but I figured why not share them since I am already doing all this work.
My husband loves a hearty breakfast which is where Keto is awesome! Bacon and eggs really stick with you longer than cereal, a muffin, or pancakes. But cooking every morning can get a little wearing. So I decided to make a Keto version of one of our favorite breakfast casseroles. There are a lot of different Keto breakfast casseroles or “quiches” out there, but a lot of them have spinach or another vegetable in them that Grant finds weird in that dish. So here is one that we really like.
